A bulb of the onion family, grown in gardens and a common seasoning. By the 12th and 13th centuries it was a staple of the English peasant diet, and it also had a place in medicine: the 10th-century Leechbook includes an eye salve of garlic, another allium, wine and ox bile. Wealthier diners preferred imported spices.
