Saltern (salt pans)
A saltern produced salt by boiling brine in shallow lead pans over wood fires. Domesday Book records large-scale salt making: Worcestershire had 318 salt houses, with lead pans, furnaces and a heavy demand for firewood, and Cheshire had its brine 'wiches'. Coastal saltworks in the Lincolnshire and Norfolk Fens and in Sussex made salt from sea water and sand, and exported white salt to the continent.
