A broad, shallow pan of sheet lead in which brine was boiled over a fire until salt crystallised out and could be raked off. Lead pans of this kind were used at the inland salt towns of Droitwich and the Cheshire wiches, whose salt-works appear in Domesday Book; the method of open-pan boiling changed little for centuries. Lead was expensive, so pans were valuable equipment.
