In their time
Bakers were among the most heavily regulated townsfolk, because bread was the staple food. The Assize of Bread tied the weight of a loaf to the price of grain, and bakers who sold short weight could be fined or pilloried. Many towns distinguished bakers of white bread from those of coarse brown bread. Townsfolk without ovens also paid bakers to bake their own dough or pies.
