In their time
Butchers slaughtered animals and sold meat, often in a designated shambles street, and were a numerous and prosperous town trade. Because slaughtering was messy and smelly, towns repeatedly tried to regulate where it could be done and where offal went. Poulterers dealt in birds, rabbits and game. Meat sales were also shaped by the Church calendar, with fast days and Lent closing much of the trade.
